Mango Shrimp Wraps

The Story

A while ago in my city, we bought shrimp wraps for lunch and ate them in the park. They were delicious, and a few weeks later I found myself remembering how tasty they were. I didn’t recall the exact flavors, but I wanted to recreate them at home in my own way — adding a tropical twist with mango, avocado, and lime sauce. I like doing wraps in general, but this one became a nice change from the usual wraps I have.

Pickled Red Onions

Pickled red onions are a fantastic addition to these wraps, and they’re easy to make at home even if you can’t find them in stores. Slice one red onion and prepare a brine using this ratio: equal parts water and white vinegar, plus half that amount in sugar and ¼ teaspoon salt. Warm the mixture to dissolve the sugar, then pour it over the onion. Add a few garlic cloves, mustard seeds, and peppercorns. For the best flavor, let the onions marinate overnight.

Shapes and Slices

When it comes to shape — don’t worry about being precise. Slice your mango and cucumber thinly so the sweetness and crunch blend nicely. Avoid large chunks of mango; thinner slices keep the flavors balanced.

Sauces

This recipe includes two sauces: a store-bought sweet chili sauce and a quick homemade lime sauce that brings freshness and harmony between the sweet and spicy notes. If you’re short on time, a simple squeeze of lime over your shrimp and mango does wonders. Remember not to add too much sweet & chilli sauce because it has an intensive flavor which easily overpowers other ingredients.

Greens and Cilantro

For greens, grab any crisp salad mix — texture is key. And don’t skip the cilantro! It’s what gives these avocado shrimp wraps their fresh, aromatic finish. Without it, they just wouldn’t taste the same.

More wraps

I usually do 8 wraps to fully use the ingredients like mango, cilantro or pickled red onion (made from 1 red onion is perfectly fine for 8 wraps). Remember to bring second (or just bigger) pack of mix salad greens, additional cucumber or two and one more avocado. Not to mention shrimps which I personally add 5 per one tortilla wrap.

Assemble the wraps: spread a little sauce in the center of the tortilla and a bit on top to help it stick when folding. Add the salad greens, cucumber, avocado, and drizzle with lime sauce. Then add the mango, red onion, shrimps, and sprinkle with fresh cilantro.

Fold the wrap and place it on a heated pan. Cook for about 2 minutes on each side until warmed through.
