Ingredients
Bulgur
- 250gbulgur
- 3tbspolive oil
- 3clovegarlic
- 1tspsalt
Vegetables & Olives
- 1piecelarge cucumber
- 1piecebell pepper
- 300gcherry tomatoes
- 100golives
Dressing
- 100mlolive oil
- 50mllemon juice
- 1tsphoney (heaping)
- 1pinchsalt
- 1pinchblack pepper
- 1clovegarlic
To garnish
- to tastesalt and pepper
- 1handfulfresh parsley
- 1handfulfresh mint
- 80gfeta cheese
Instructions

Heat olive oil in a pot over medium heat and add the garlic. Sauté for 1–2 minutes until softened and fragrant.

Add bulgur, pour in water, and season with a teaspoon of salt. Stir, cover, and cook on low heat for about 10 minutes.

Remove from heat, uncover, and let the bulgur cool down a bit.

Meanwhile, chop the vegetables and olives into similar-sized pieces and transfer them to a large bowl.

Combine all dressing ingredients in a jar and shake well until smooth and thick. Alternatively, whisk them together in a bowl.

Once the bulgur has cooled, add it to the bowl with the vegetables. Pour in the dressing and mix well. Season to taste with salt and pepper.

Add chopped fresh parsley and mint.

Crumble feta cheese on top just before serving.
